In Spain many cheeses are made, some of them internationally renowned. Throughout the entire geography there cheeses of milk of cow, goat and sheep, which is used to produce various cheeses. Some regions are better known for its cheeses than others, being singularly known Manchego cheese. However, there are 23 cheeses with denomination of origin in Spain and countless others who do not. They come in all types of milk of sheep, goat, cow or mixtures. Some are fresh and cured, pressed paste or not, raw and pasteurized milk, cream, blue, etcetera.
Cheeses by communities
In alphabetical order:
- Andalusia
- Queso de los Pedroches from raw sheep milk, mostly merino of Sierra de Cazorla;
- Queso de Cabra Payoya of Grazalema, the Sierra de Cádiz.
- Quesitos de Zuheros, Córdoba.
- Aragon, the best known is the Queso de Tronchón, which was cited by Cervantes in Don Quixote, and made with milk of sheep, perhaps mixed with milk of goat. Also:
- Asturias, of the Asturian cheeses the best known is the Quesu de Cabrales, a blue cheese arteasanal, but also are representatives
- Balearic Islands
- Formatge de Maó, Menorca.
- Canary Islands
- Queso herreño;
- Queso majorero; (with D.O.)
- Queso de flor; (with D.O.)
- Queso palmero; (with D.O.)
- Queso de la Gomera;
- Almogrote;
- Queso de Lanzarote.
- Cantabria, for its proximity with Asturias, the Picón Bejes-Tresviso(D.O.) is very similar to Cabrales, but are also importants
- Quesucos de Liébana (with D.O.P.)
- Queso Nata de Cantabria, (with D.O.P.);
- Queso de Áliva, smoked beef;
- Queso de Brez
- Queso Torta de Potes.
- Catalonia is a region very cheeser, which makes great efforts to maintain and restore cheeses:
- Galicia, especially cheese of cow, the best known is Queixo de Tetilla, but they also have regulatory board designation of origin:
- Arzúa-Ulloa;
- Queixo San Simón da Costa;
- Cebreiro;
- Queixo de tetilla with milk of Rubia gallega cow.
- Navarra: the Erronkariko gazta, also with D.O. and of lachen sheeps, plus:
- Urbasa gazta, of menhaden sheep;
- Ribaforada gazta of goat;
- Cabanillas gazta, also of goat;
- Lesaca gazta of milk of cow or mixture.
- Basque Country, have shared with Navarra the Idiazabal gazta, obtained of lachen sheeps.
- Region of Murcia
- Queso de Murcia al vino is a cheese of milk of Murcian goat pasteurized Murcia with protected designation of origin;
